Mix all the seasoning together and coat the entire roast. Sear the roast on all sides and remove. Next sauté onions, garlic and scrape all the delicious brown flavorful bits from the pot. Return the roast to the pot and pour in bourbon and chicken broth. Cook on high pressure for 2 hours, depending on the weight of your roast (this was 7 lbs) The roast is done when the meat is fork tender.
