Summer blueberry harvest meets Bespoke gin for this light and fun summer cocktail. A light and sweet simple syrup takes the tart edge off the tart blueberries for an utterly refreshing twist on a collins cocktail recipe.
Ingredients

2 oz of Rabbit Hole Bespoke Gin

1/2 oz Lime Juice

1/2 oz Simple Syrup

Blueberry pomegranate sparkling water

Blueberries
Directions
Add the blueberries to the mixing tin and muddle with gin.
Add the lime juice, simple syrup and lots of ice.
Shake well, fine strain over ice.
Top with blueberry pomegranate sparkling water.
Garnish with 3 blueberries.
