Summer isn't quite over, so take a deep plunge into a tall glass of everything "summer" with this spiked watermelon lemonade cocktail. Within minutes, you can have a pitcher full of fond memories sitting by the pool one last time, or sip the refreshing and crisp happiness as you fire up the BBQ grill one last time.
Ingredients

10-12 ounces Liddel French Winter Wheat Vodka

6 cups cubed seedless watermelon , chilled (about 2 lbs after peeling)*

2/3 cup granulated white sugar

3/4 cup fresh squeezed and strained lemon juice (also chilled)

4 cups cold sparkling water

Watermelon wedges (garnish)
- Ice and fresh mint for serving
Directions
Add watermelon to a blender and pulse until well pureed (there should be about 4 cups). Pour through a fine mesh strainer into a bowl.
In a large glass pitcher, whisk together the Liddel vodka, water, lemon juice and sugar until all of the sugar has dissolved.
Next, stir in pureed watermelon and ice.
Store in refrigerator until ready to serve in highball glasses. Garnish with watermelon and mint leaves.
